There is no better place to get a true sense of hygge than your dining area. Whether that be a dinner table, a picnic table, the floor, a picnic blanket- this is the place where connection happens. Good food and good community.

Beef stroganoff is a family favorite that is easier and quicker to make than many realize. This takes under an hour to make, and can take under 30 minutes if your stove is cooperative (mine is not).
My husband and I used to live on hamburger helper when we were first married. It was quick and easy, plus we loved the taste. As we got older and wiser and our family grew, I had to find a new way to prepare stroganoff that wasn’t from a box.
This recipe is portioned for eight people, which usually feeds our family of six (hello, hungry growing boys) and my parents if I’m sure to set aside their portions before letting my crew dig in. It’s easy to cut in half for a smaller crowd, and also great to multiply if you’re having guests and need something easy to whip up!

Method
- Heat a large, deep pan over medium heat with your olive oil. Add the ground beef, break it up into smaller pieces as it cooks.
- While you're cooking your beef, follow instructions on the package to cook your egg noodles so they are ready to add later.
- Add your onion and garlic. Sauté for a few moments until your garlic is golden brown.
- Add your mushrooms and sauté for around five minutes. If they release a lot of juice, sauté until it evaporates.
- Add flour and make sure you completely mix it in (you don't want clumps!).
- Add your water + beef bouillon, milk, and Worcestershire sauce, plus salt and pepper. Bring it to a simmer and turn your heat to low. Let it cook, covered, for five minutes. *
- Add your egg noodles, then remove from heat. Stir in your sour cream and add another dash of salt and pepper.
- Enjoy!
Notes
Having a list of meals that I rotate through used to bug me. I love to cook and experiment in the kitchen. However, as a mom, sometimes … most of the time… that is not always worth it when the kids are younger. Food is one thing I do not want to fight over, so finding things that everyone likes (or are easily adjusted for picky eaters) is super important.
I plan to share more simple suppers not just to help parents of picky eaters, but to remind us they all food can bring joy and connection. Eating a meal together reminds us to slow down and cherish the moments, even if those moments are your nine-year-old picking out tiny pieces of mushroom and onion.
